The Roquefort affinage cave is a damp limestone cathedral carved into a collapsed plateau, held near 9°C and 95% humidity by natural fleurines — fissures that breathe cool mountain air across original oak ripening shelves. In this perpetual dusk, wheels of cheese grow their living rind: moldy yellow-brown crusts veined with blue-green Penicillium.
This design system reads on the dark cave stone itself. The signature is the moldy rind brown, supported by blue-green vein, deep mold-green, oak-shelf brown, and ivory cheese paste — a palette of patient, living craft rather than clean dairy packaging.
